( Before I get started, I just want to say sorry for not posting in a while, I’ve been very busy, but know I am committed to posting new blog posts every Monday, wednesday, friday, and sometimes on Sunday. )

Yesterday was my vegan two month anniversary, so today I have officially been vegan for two months (and a day)!! I can’t believe I have been vegan for this long, it’s crazy to think that I used to think being vegan was the hardest thing in the world, and now i am vegan, and it’s super easy! I am so happy that I chose to become vegan, and in honor of my two month vegan anniversary, I thought I would answer some commonly asked questions about veganism.

  1. Hardest part

The hardest part of being vegan, has probably been going to places with little to no vegan options. This is definitely a challenge a lot of vegans face, and it’s hard when you go to eat somewhere that the only vegan options are just little sides and not full meals, but what i always do if i'm in that situation is I’ll eat something small then wait till I get back home and I will eat something more filling.

  1. Favorite breakfast, lunch, dinner, and dessert

My favorite vegan breakfast has been the avocado toast from Vintage in Vail, Co. (definitely recommend it if you are in Vail) It is so delicious and I am obsessed with it! My favorite lunch has been The Wagyu Beef Bowl at Sweet Basil, in Vail CO. Except, when I order it I get it with no beef, and ask them to not cook the noodles in beef stock, and my favorite dinner has DEFINITELY been the vegan fajitas my mom made about a month ago! If you want to see the recipe for it, check out my post on it right here: https://www.thesustainablesunflower.com/post/vegan-fajitas-how-to These fajitas were soo good! And even if you aren’t vegan, you will LOVE these! Last but not least, my favorite vegan dessert has been.. La Nonna’s lemon and berry sorbet, I had this a few days ago for my birthday, and it was sooo good! I totally recommend all of these vegan foods if you are in Vail, Co.

3. What inspired you to become vegan, and why did you become vegan?

I randomly came across Kristen Leo’s video about fast fashion (https://www.youtube.com/watch?v=fR7bXsoNwwE) , and learned about all the bad things in the fast fashion industry, and then I quit buying fast fashion, a little while after. I really loved kristen leos videos, and was watching a lot of them and came across her videos on veganism, and had the idea to try being vegan for a week, I’ve always thought of being vegan when I was older, and wanted to see if i could do it, I went vegan for a week, then month, and I’ve never stopped since.
